This was my first time eating buffalo, and I must say, I was pleasantly surprised. I'm not quite sure what it was about it that made it so good. The consistency? The spices? Anyway, if you get the chance to order buffalo and it's just a little bit more cost, I highly recommend it so you taste for yourself.

I'd imagine the meat to be tougher than beef?

I think buffalo wings has left an impression on me... when I first glanced thru the topic I was thinking this was chicken burger.

But then if it was chicken you'd just call it a chicken burger.

i think "buffalo burgers" can still mean the chicken burgers that you speak of.

in case you weren't aware already, buffalo refers to that neon orange hot sauce - so-called b/c it's a trademark of Buffalo, NY.

so USUALLY, a "buffalo burger" is a chicken burger with that neon orange sauce.

it just so happens that this time, it was actual buffalo meat. and no, i don't think it was tougher. i would liken it to some tender, juicy porkchops.
